This cake has many names all around the world for example jelly rolls, Swiss roll, but in Sweden it is called rulltårta. It is a simple sponge cake which is one of the classical cakes to make when you will have guest coming over. The Swedes are crazy about chocolate cake that is sticky in the middle (kladdkaka). This is a basic one that is common to do. To change it a bit you can add some chocolate both inside the cake, and on top of it.

This is a recipe for a white chocolate mousse cake. The combination of the mousse and the dark almond paste bottom gives a smooth taste. This cake is special in the sense that you put it in the freezer before you eat it. This way it resembles more an ice cream than a mousse cake.

Everyone knows that Swedes are crazy about their lingonberries and serve it to all kinds of food. This cheesecake recipe with lingonberries proves that you can have a dinner with lingonberries as a theme ! The autumn is the season for these berries. If you don't want to go out in the forest to pick them yourself you will find fresh ones in the shops during this period of the year, or frozen ones all year around.

A dessert pie with no bottom, instead it have crumbles on the top. You can make it with any berries or fruits that you like. It is very good to serve the pie medium warm together with vanilla sauce or vannilla ice cream.

Have you heard of the Swedish semlor, a cardamom bun filled with almond paste and whip cream? The semlor (plural) is so popular so it even exists a special day for this pastry, the Tuesday between Shrove Monday and Ash Wednesday. This is a modified version of the original semla made in to a big soft cake that still taste like a real semla.

This cake is considered magical because the cake has three different layers, but only require on batter. This might have more to do with science than magic but it is still amazing when you see the result. The cake has a soft fluffy bottom, a creamy middle and a dense top, or you can have it the other way around if you prefer.

These small Alsatian bredele makes a nice addition to your Christmas cookie jar. There are many different bredele so it is tricky to find just one favorite, but maybe these small coffee cookies will become your new favorite. You can bake them a few weeks before and keep them in a thin box with a baking paper until it's time to serve them.
