This couscous salad is a perfect lunch in the summer and if you get leftovers it serves super as a lunch box the day after. You basically prepare the couscous with ingredients you have at home, this way you will have different salads every time.

Ingredient List for 2 servings:

300 gr Couscous

150 gr Olives

150 gr Feta cheese

2 tablespoons Olive oil

2 tablespoons Rosemary

1 teaspoon Basil

1 teaspoon Oregano

1 pinch Salt

50 gr Arugula
Instructions:

Pour the couscous, salt and pepper in a bowl.

Boil 300 ml water and pour it over the couscous, stir and let the water soak in.

Cut the olives and the feta cheese, and pour it in the couscous bowl.

Pour all the rest of the spices and the olive oil in the the bowl and mix well.
