Mix the sugar with the warm water until the sugar is resolved.
Crumble the yeast and add it to the liquid and mix until it is lump free.
Pour the mixture in a kitchen aid and mix it with 3 tablespoons of soft butter, and the egg.
Pour the flour in slowly while mixing it.
When the dough makes a bowl around the dough hook it is time to stop mixing it.
Place a plastic film over the bowl and place it in the oven for minimum for 1 hour.
Mix the rest of the butter together with the parsley and pressed garlic.
Cut the mozzarella cheese in to 24 pieces.
Preheat the oven with electrical heat at 200 degrees Celsius.
Take out the dough from the oven and divide it in 24 small balls and flatten them out a bit.
Place the mozzarella cheese bites in the middle of each dough piece.
Brush the cheese with some of the butter mixture, and roll the dough together like a small ball. Make sure to not have an opening or a seam in the dough.
Place the bread balls on a baking form and place it in the middle of the oven for 10 minutes.
Take out the bread and let them rest 5 minutes before serving them.
