This homemade healthy couscous salad takes under 30 minutes to prepare. I usually make it in the middle of the week. This way I can make lunchboxes with the leftovers to bring to work the day after. Easy to make and to make it slightly different every time, depending on the mix of ingredients you find in your kitchen.
