Crumble the yeast in a bowl and mix it with the water until it is lump free.
Pour the flour, 2/3 of the pumpkin seeds, and salt in the bowl and mix it to a smooth dough.
Place a towel on the bowl and let the dough rest for minimum 2 hours.
Start the oven at 225 degrees Celsius.
Place the dough in a long baking form, and sprinkle the seeds on top of the bread.
Place the bread in the oven for 30 minutes.
Take out the bread and let it rest 30 minutes before serving it.
