When I was asked to bring some saffron treats for a gathering a while ago, I wondered for a while what to bake. I came up with a variant of the popular Swedish chocolate ball. I thought what can be better than having a Swedish fika with a classic coffee bread with a little twist. These delicious homemade saffron balls are covered with chocolate and dipped in coconut flakes.

Ingredient List for 10 servings:

150 gr Graham biscuits

120 gr Butter

60 gr Icing sugar

0.5 teaspoon Vanilla extract

200 gr Milk chocolate

100 gr Grated coconut flakes
Instructions:

With a hand blender mix the biscuits to crumbles.

Mix together with vanilla sugar, icing sugar and saffron.

Add the vanilla extract and butter an mix well.

Roll preferred size balls.

Place in the fridge for 1 hour.

Melt the chocolate.

Pour the grated coconut flakes in a bowl.

The popular Swedish sandwich cake is more like a big sandwich than a cake. It is made from toast bread with various fillings in between the layers. It is nicely decorated to reflect the fillings. It is prepared in a few minutes and is perfect for a spontaneous dessert. If you want a sauce on the side whip cream fits nicely together with the cake.
