This is a recipe of a Taco cake also known as tortilla cake. I love stacking layers of tortilla breads filled with taco spiced mice beef, and covered in cheese. When taking it out of the oven the cheese is melted, and you can decorate it with your favorite ingredients. This time we covered it with slices of salami, olives and mini mozzarella. The whole family likes to eat this cake with taco chips, guacamole and fresh vegetables while watching a movie on Friday evenings.

These homemade small pancakes resemble something between American pancakes and a sponge cake. You can eat them warm or cold depending on the occasion. They taste good with jam and whip cream when they are newly made. You can also have them cold for a picnic.
This Swedish prince cake is another version of the famous princess cake. It is a homemade blueberry cake which is a hit at any birthday parties in the autumn when it is high season for blueberries. It is a creamy cake with a blueberry and white chocolate filling, topped with a layer of marzipan.
Everyone knows that Swedes are crazy about their lingonberries and serve it to all kinds of food. This cheesecake recipe with lingonberries proves that you can have a dinner with lingonberries as a theme ! The autumn is the season for these berries. If you don't want to go out in the forest to pick them yourself you will find fresh ones in the shops during this period of the year, or frozen ones all year around.
